How to make easy Christmas fruit cake Ingredients ( for 25*19 cm baking form) : Powdered sugar – 90 g Almond flour – 90 g Egg white – 30 g (1 pc) Whole eggs (room temperature) – 5 pcs Honey – 150 ml Brown sugar – 90 g Butter (melted) – 180 g Flour – 90 g Walnuts – 240 g Strawberry – 150g Cranberry - 150 g Sugar – 50 g Corn starch – 26 g Powdered sugar – 20 g Fresh berries and mint for decoration Preparation: Mix powdered sugar, almond flour and egg white. Whip it with eggs (room temperature) for nearly 10 min. Preheat an oven to 175 C. Add honey, sugar, melted butter, then flour and pecans or walnuts. Bake for 50-60 min. In case of using separate cooking rings bake for 35-45 min. Mix strawberry and cranberry, make puree. Add sugar and corn starch. Bring to boil and cook on medium heat for nearly 3 min until thickening. Remove sponge cake out of form and cut circles of different diameter. Sprinkle with powdered sugar, spread berry cream on them. Put one on another and decorate with fresh berries and mint.
