Walnut orgeat is very simple, and just like all the other homemade orgeats. Doesn't matter what nut you want to use, the procedure is the same.
Chop nuts, weigh them, use twice their weight of water, and soak them in the fridge overnight. Strain it out, and add an equal weight of sugar. Add salt if you like, and/or rose water and organge blossom water. Don't add too much rose!
I made a fun brunch cocktail with it:
1 oz Cold Brew Coffee Concentrate
.75 oz White Rum
.5 oz Walnut Orgeat
.5 oz Half and Half (or cream)
.25 oz Coffee Liqueur
This would work well with Cocoa Liqueur, or even Banana Liqueur.
