Please click this link to donate: https://www.paypal.me/suhasdishes Cake ingredients: 2 1/2 cups (325 g) all_purpose flour 1/2 cup (40 g) unsweetened cocoa powder 1/2 tsp salt 1 tsp baking powder 1 1/2 tsp baking soda 1 1/2 cups (350 g) white sugar Lemon zest from 1 lemon 2/3 cup (160 ml) vegetable or canola oil 2 tsp pure vanilla extract 1 tbsp (30 ml) white vinegar 1 cup (240 g) apple sauce 1 cup (240 ml) hot boiling water Glaze ingredients: 1 cup (100 g) powdered sugar 1 tbsp (5 g) unsweetened cocoa powder 1 tsp pure vanilla extract 1 tbsp + 1 tsp water Apple sauce ingredients: 1 kilo or 2 pounds Granny Smith apples 2 tbsp (25 g) white sugar 1 cup (240 ml) water 🌹Apple sauce Instructions🌹 1. Peel, core, and dice the apples. 2. Place the apples, sugar, and water in a medium pot. Bring to a boil over high heat. Reduce the heat to medium-low and simmer covered stirring occasionally until apples are very soft and fall apart for about 10 minutes. 3. Let cool completely in the pot, then puree in the food processor until smooth. 4. Refrigerate up to 5 days or freeze up to 2 months. 🌹Cake Instructions🌹 1. Preheat oven to 350 degrees F (180  degrees C) with the oven rack in the center of the oven. Grease a 9 by 13 inch (23 by 33 cm) baking pan (I used a glass baking pan) with cooking spray, and place a parchment paper in the bottom of the pan. Spray the parchment paper and flour the entire inside of the pan, tapping out the excess. Set aside. 2. In a large mixing bowl, sift the flour, cocoa powder, salt, baking powder, and baking soda. Add in the sugar and whisk until well combined. 3. Zest 1 lemon on top of the dry ingredients. Add in the oil, vanilla, vinegar, apple sauce, and hot boiling water. Mix with rubber spatula until just combined, then switch to the a whisk and continue mixing until smooth and lumps free, about 30 seconds. Do not overmix. 4. Pour the batter into the prepared pan and bake on the center rack for 30 minutes or until a toothpick inserted in the center of the cake comes out clean. 5. Remove from the oven and let cool completely in the pan for about 2 hours. 6. For the glaze, combine the powdered sugar, cocoa powder, vanilla, and water in a bowl and whisk until smooth. Place the glaze in a sandwich ziploc and snip the tip of the corner with a scissors, then drizzle over the top of the cooled cake. Cut into squares and garnish with fresh strawberries.
