Madua/ मड़ुवा/Ragi/Finger millet is widely used in Jharkhand region and south India.It is used to prepare Chilka roti/Roti/cake and variety of cuisines.Trying a fusion of Tribal culture of North East India & jharkhand region, I present you Chicken Cheese Momos.Madua momos are gaining popularity rapidly in jharkhand and nearby Tribal region. Chicken Cheese momos made from Mudua/Ragi/Finger Millet Flour-.Gluten free very healthy recipe. So why to compromise with taste.Try this guilt free recipe and relish with friends & family.Worth giving a try. Ingredients: Hot Chutney Tomato medium size-3 Red chilly (Soaked overnight)-4-5 as per your taste Garlic clover-4-5 Salt-To taste Black pepper powder-1/4 tbsp Momos stuffing: Chicken boneless-200 gms Garlic cloves-5-6 Ginger-1/2 inch Salt-To taste Green chilly-1 Black pepper powder-1/4 tbsp Vinegar-1/4 Tbsp Soy sauce-1/4 Tbsp Spring onion-whites & greens(1 Tbsp each) Some grated Processed cheese(optional) Momos Madua/Ragi flour-1/2 cup Wheat flour-1/2 cup Oil-1/2 Tbsp Salt-To taste Mince the chicken with all ingredients under stuffing except spring onions. Once minced add spring onions and mix.set aside. Hot chutney-Chop tomatos top and make X slit on bottoms. Microwave until soft or blanch to soften.Cool and blend with rest of the ingredients given under hot chutney. Momos:Take madua/Ragi flour,Wheat flour,oil,salt mix and using water knead a soft dough. Rest dough for 1/2 hr covered. Roll the dough into thin sheet and cut circles with cookie cutter or any katori you have. Fill each momos with chicken stuffing and top with grated cheese. Fold using shown technique or of your choice. Preheat the steamer and grease Momo vessel.Now place all the momos and steam for about 8-15 mins.
