FOR DRY ROASTING INGREDIENTS
2 Tbsp sesame seeds
1 Tbsp peanuts
1 Tbsp poppy seeds
1 Tbsp coriander seeds
1 Tbsp cumin seeds
1 tsp black pepper
6-7 Cloves
1 Black cardamon
2 bay leaves
2 inch stick cinnamon
when you can smell the aroma - turn off the flame and add:
1 Tbsp grated coconut - stir constantly so it won't burn
Grind/blend:
2 Med red onions
3-4 green chills
2-3 Tbsp water
1 lb aubergine - fry in oil placing the dry roasted ingredient in the middle as a filling
1/2 C oil
when cooked remove from oil and to this oil add:
The onion, green chili mixture and start frying this and add:
1/2 tsp turmeric
2 tsp red chilli powder
1 tsp salt
1/2 tsp ginger paste
1 tsp garlic paste
Tamarind paste half cup
for garnish add 6-7 green chili
Cook until oil separates from the mixture and add the aubergine
Serve with rice.
