Today, I'm going to share with you a fantastic method to preserve fenugreek leaves for a long time. This technique is going to be a game-changer for all of you who love using fenugreek leaves in your cooking but hate it when they go bad so quickly. So, let's get right into it! First things first, we need to crush the fenugreek leaves. This step is crucial because it helps in preserving the leaves effectively. Take a bunch of fresh fenugreek leaves and remove any stems or impurities. Now, using a mortar and pestle or a food processor, crush the leaves until they become a coarse paste. The idea here is to release the oils and flavors of the fenugreek leaves. Once you have crushed the leaves, it's time to freeze them. Grab an ice cube tray and fill each compartment with the crushed fenugreek leaves. Press them down gently to ensure there are no air pockets. Now, place the tray in the freezer and let it freeze completely. Once frozen, transfer the cubes into a ziplock bag or an airtight container. This way, you can easily take out the required amount whenever you need them. Now, let's talk about making methi ki roti, one of my personal favorites! For this, you'll need some whole wheat flour (atta), the frozen fenugreek cubes we just made, salt, water, and a little bit of oil or ghee. In a mixing bowl, add the whole wheat flour and a pinch of salt. Mix it well and then add in the frozen fenugreek cubes. Start kneading the dough by slowly adding water until you achieve a soft and pliable consistency. Once the dough is ready, cover it and let it rest for about 15-20 minutes. After resting, divide the dough into small portions and roll them out into round rotis using a rolling pin. Cook the rotis on a hot tawa or griddle, flipping them once they start to puff up. Brush a little bit of oil or ghee on both sides for that extra flavor and golden color. And there you have it, delicious methi ki roti ready to be enjoyed!
