In Bengal Nolen Gurer Payesh is the most coveted delicacy, especially in winters. Nolen gur or date palm jaggery is made from the sap of the date palm tree. The process is only conducive during winter – which is also why new jaggery is available for the brief cold season. Gobindobhog Rice is slowly cooked in boiling milk and then sweetened with decadent Nolen Gur /Jaggery.
