Potato rolled tacos, turkey tacos, and salsa verde Recipe (serves 4) INGREDIENTS: 4 potatoes (I used gold potatoes) peeled and quartered 8 tomatillos, peeled and washed 1 lb ground turkey meat 1 bunch cilantro 1 lime 1 jalapeño, pitted and seeded ( for added spice leave pit and seeds) 2 c shedded cheese of preference 6 T favorite taco seasoning Corn tortillas Vegetable oil for frying Toppings: Diced tomato Cilantro Shedded cheese Chopped lettuce DIRECTIONS: 1. Peel and wash 4 potatoes. Quarter. Set aside. 2. Peel and wash 8 tomatillos. 3. Heat to boil salted water, in sauce pot, add potatoes and cook until soft approximately 10-12 minutes. Strain, set aside in bowl for mashing. 4. While potatoes cook heat oil in frying pan over medium heat. Add tomatillos and cook approximately 10 minutes, turning every 2-3 minutes. Blistering is good for flavor. 5. Place cooked tomatillos, jalapeño, 1/2 bunch cilantro, and juice of one lime in blender. Blend until smooth. Put in container and cool in fridge. 6. Mash potatoes, after cooled, with 2 T favorite taco seasoning, 1/4- 1/2 cup (preference on cheesiness). Mash until smooth, some lumps are ok for texture. 7. Hand roll lengths of potato into finger length, thumb thick. Chill 10 minutes. 8. Warm tortillas in oven or microwave, just to pliability. Place one length of potato at end of tortilla and roll away from body. Pierce with toothpick to keep closed. Repeat until potato product is done. I made 4 in the video. 9. Heat oil in pan over medium high heat. Add rolled tacos and cook until golden brown on each side. About 6-8 minutes depending on oil temperature. Reserve oil for remaining tortillas for taco shells. 10. Heat pan on medium high heat add turkey meat, add 3-4T favorites taco seasoning. Cook until browned. 11. In reserved oil heated to medium heat add tortilla, flip after 20 seconds, then after 15 seconds use tongs to fold/bend taco shell into shape. Hold for 30 seconds, then turn to crips other side.
