HOW TO MAKE SIMPOL PANCIT PALABOK

INGREDIENTS
For the noodles:
1 pack rice noodles (bihon)
water
salt
For the sauce:
cooking oil
1 onion
3 cloves garlic
1 tablespoon dried shrimp (hibi)
1/2 cup annatto oil
1/2 cup all-purpose flour
3 cups shrimp stock
1/4 kilo ground pork
3 pieces fresh shrimp
fish sauce
ground black pepper
1 egg
For topping:
chicharon
fried garlic
fried tinapa flakes
shrimp
calamansi
spring onions
boiled eggs
fried tofu / tokwa
*Cooking tip: You can saute the ground pork in garlic and onion to make it more flavorful. You may also simmer the pork for 5 minutes, since it cooks fairly quickly.
