Hello Friends!!! Jai mata Di. Welcome to my channel. Today, I am sharing a very tasty and delicious Fasting recipe of Lauki Ki Barfi or you can say lauki ki lauj , Specially made for fasting people. It is made of Bottle guard ( lauki ) . As you know ,Particularly In India, cereal grains are not consumed during fasts. Hence, Lauki is widely consumed during fasting days like Navratras etc. Lauki or bottle gourd is a vegetable which is eaten in many of the families in the days of fasting. Lauki ki lauj is a dessert made with lauki and milk. This is a traditional dessert made all over India. So I am sharing my recipe of Lauki ki Lauj which is very yummy in taste and perfect offering to God. Lauki ki barfi recipe is a dessert recipe or a kind of confectionery recipe made by bottle gourd, sugar, and khoa ( thickened milk , Cardamom powder and few dry fruits are also added in this barfi recipe for extra flavors. This lauki ki barfi recipe is a popular festival recipe and vrat recipe (fasting recipe) in India. INGREDIENTS : - 1 Kg. Bottle guard ( Lauki ) , washed, peeled and grated. Dip in Water otherwise it will turn black. - 1 Cup Sugar. - 200 Gms. Mawa ( Thickened milk / Milk Solid ) - Grounded cardamom, - Handful of Chopped Almonds, - Handful of chopped Pistachios. - ¼ Cup of Clarified Butter ( Desi Ghee ). - Green Food Colour RECIPE : - Put 2 Tbsp of clarified butter in a heated Wok. - Squeeze out the water from grated Bottle guard and put in the Wok. - Stir it, Continuously till it gets soft . Keep the flames on medium. - Once gets soften, add Sugar, Stir thoroughly . - Sugar released water, We need to cook till whole water evaporates fully. - Keep the flames on medium. - Once water gets evaporated / dried fully, add cardamom powder, Chopped almonds, Thickened milk ( mawa ) . Mix nicely. - Stir constantly on medium flames. - Add 1 Tsp of food green colour ( it is optional and you can skip ). Mix nicely. - Stir till the mixture gets thick and starts leaving Wok. - Grease the tray with clarified butter, nicely. - Once the mixture gets thickened transfer it to the greased tray . Spread evenly . keep aside for 3-4 hours for setting. - After 3-4 hours , when the mixture sets well, Cut it into square or any other shape of your choice. - Sprinkle chopped dry fruits on it and pat with a spoon for proper fixing in dessert. - A very delicious , tasty and nutritious Lauki ki Lauj / Barfi is ready.
