AJWAIN LEAF FRITTERS | DODDAPATRE BAJJI| INDIAN BORAGE | KARPURVALLI BAJJI | MEXICAN MINT | CUBAN OREGANO
INGREDIENTS
Ajwain leaves: 10-15 (washed well with water)
Besan: 1 cup
Rice flour: 1/4 cup
Turmeric: 1/8 tsp
Red chili powder: 1-2 tsp (adjust to taste)
Coriander powder: 1 tsp
Chaat masala: 1/4 tsp
Salt to taste
Carom seeds: 1/8 tsp
Oil for deep frying
Water for making batter
PROCEDURE
Wash the ajwain leaves well with water and drain the water.
In a mixing bowl, add all the dry ingredients and mix well.
Heat oil and pour 3-4 tbsp of hot oil to the dry ingredients. Mix well.
Add water little by little to make batter.
Make sure the batter is not watery. It should be of medium consistency (not too thick, not too thin).
Dip the ajwain leaves in the batter.
Heat oil for deep frying.
Carefully drop the battered ajwain leaf in hot oil.
Fry well on both sides.
Take out the fritters once they are golden brown in color.
Ajwain fritters are ready. Enjoy it hot cup of tea and some ketchup.
