I deleted the center mounted (forward of rear axle) resonator on the our 2000 E320 wagon, in search of better sound and better MPG. I think it was a good decision - this little thing is very heavy & kills the exhaust note. If you're considering an exhaust upgrade on your w210 rig, I'd suggest upgrading the Muffler first, then only delete resonator later if the new muffler is still too quiet. Keep in mind, at least on the wagon, the Resonator IS a Y-pipe, so you'll want to obtain a nice quality built Y-pipe to weld in it's place - making sure to keep the twin pipe lengths even up so you don't create a pressure imbalance between cylinder banks. There's more to the exhaust physics, but for now just make sure to observe that factor. Our wagon now sounds like a V-12 Jaguar E type exhaust I loved from my childhood - very sweet to listen to !
